I feel like chicken tonight, like chicken tonight!

I like to steer clear of red meat for health reasons but sometimes eating chicken can get boring.  Chicken is easy to cook but you have to really work some magic with the spices to prevent it from being bland.  I LOVE the following recipe and my mom just tried it out and she enjoyed it as well.  It combines three of my favorite ingredients, garlic, balsamic vinegar and mushrooms! Enjoy!

Balsamic Chicken Breasts:
Ingredients:
Two boneless skinless chicken breasts
6 ounces fresh sliced mushrooms ( I love mushrooms so I throw in a lot more than six oz.)
1 Tablespoon olive oil
3 cloves minced garlic
2 Tablespoon balsamic vinegar
1/4 cup and 2 Tablespoons chicken broth 
1/2 bay leaf
1/8 dried thyme
1 1/2 teaspoons butter

-Season chicken with salt and pepper.  
-Saute chicken in oil until browned on one side.  Approximately three minutes.  Add garlic, turn chicken; scatter mushrooms on top of chicken.  
-Continue frying, shaking the skillet and stirring mushrooms.  
-Cook for about three minutes, then add vinegar, broth, bay leaf, and thyme.  
-Cover and simmer ten minutes over medium-low.
-Transfer chicken to a serving platter, cover.
-Continue simmering sauce uncovered over medium-high for seven minutes.
-Swirl in butter. 
-Pour sauce over chicken and serve.

  1. That sounds yummy... here is a marinade that we like a lot for chicken. We will cut it up and eat it on salads or just with a side.

    1/2 cup red wine vinegar
    1/2 cup soy sauce
    1/2 cup olive oil
    1 tbls parsley
    1 tsp basil
    1 tsp oregano
    1/2 tsp garlic powder
    1/2 tsp pepper

    mix together and marinate chicken for at least 1 hour prior to cooking.
